Œnological objectives
Granualrs Ferm’oak are a tailor-made blend of French and American woods with different toast temperatures, the objective is to mature the varietal fruit and add tannic concentration and sweetness on the palate.
For what type of wine ?
Granualrs Ferm’oak fit perfectly with fresh/vegetal wines that lack concentration on the palate. An interesting wood to work with on thermo red wines or wines with low phenolic maturity.
Direction for use
When is the right time to apply ?
The granular format allows you to extract the potential of the wood in the wine very quickly (3 to 5 days). it is an interesting format for alcoholic fermentation. Applying it during fermentation ensures that the fruit ripens while benefiting from the added sweetness and concentration on the palate.
How much to apply ?
The dosage of Ferm’oak granulars should be adapted according to the level of ripeness of the grapes. Between 1 and 4 g/L for white, rosé and red wines.
What is the contact time for these granulars ?
During fermentation : the time required for vinification. A period of 3 to 5 days is necessary to
extract the full potential of the wood (aromatic and contribution to the palate).
